Plum Good Pork Chops

Both plums and prunes contain powerful antioxidants that work to help prevent cancer and heart disease. This fruit also lends a sweet, tangy, flavor to this Asian inspired meal.

3 Tablespoons plum preserves
1/2 cup green onion, chopped
1 Tablespoon light soy sauce
2 teaspoons lemon juice
1/8 teaspoons curry powder
1/16 teaspoon ground cinnamon
2 pounds pork loin
1 clove garlic, minced

For sauce: In a small saucepan heat and stir plum preserves, green onions, light soy sauce, lemon juice, curry powder, cinnamon, and red pepper over medium heat until bubbly. Trim fat from loin chops. Rub both sides of chops with minced garlic.

For chops: Grill on an uncovered grill directly over medium coals for 25 to 30 minutes or until slightly pink in center and juices run clear, turning once. Brush with sauce during the last 10 minutes of grilling. If desired, garnish with plum wedges.

Makes 8 servings. Each serving contains 247 calories, 4 grams carbohydrate, 9 grams fat, 94 mg cholesterol, 35 g protein, and 174 mg sodium.
