Oven Baked Fries
4 large (3-4" diameter) potatoes
2 Tablespoons olive oil
2 Tablespoons Parmesan cheese, grated
4 Tablespoons Italian seasoning
4 Tablespoons no-salt-added tomato ketchup
Preheat oven to 375 degrees. Scrub potatoes and pat dry. Cut each potato lengthwise (leave skins on) to make eight wedges. Add potatoes, Parmesan cheese, and Italian seasoning to a resealable plastic bag. Pour olive oil into plastic bag. Seal bag and shake contents until potatoes are thoroughly coated with spices. Arrange potato wedges cut side down in a single layer in 15x10 inch jelly-roll pan. Bake 30 minutes or until golden brown and edges are crisp. Drain on paper towels. Serve with no-salt-added ketchup.
Makes 4 servings. Each serving contains 235 calories, 8 grams of fat, 37 grams carbohydrate, 2 mg cholesterol,, 5 grams protein, and 72 mg sodium.
