Sweet and Sour Coleslaw
This salad combines the sweetness of fruit and honey with bit of sour from lemon juice and yogurt for a perfect flavor combination.
1 cup (8 ounces) fat-free plain yogurt
1/2 cup honey
1/4 cup white vinegar
3 Tablespoons lemon juice
1/8 teaspoon black pepper
16 ounces fruit cocktail in water
2 cups blueberries
1 cup strawberries, sliced
1 banana, sliced
16 ounces, coleslaw mix (one package)
In a large bowl, combine the yogurt, honey, vinegar, lemon juice, and pepper. Add the fruit cocktail, blueberries, strawberries, and banana. Stir in coleslaw mix.
Makes 4 servings. Each serving provides 109 calories, 26 grams of carbohydrate, 0 grams of fat, 0 mg cholesterol, 2 grams protein, and 26 mg sodium.
