Parmesan Chicken
Bread crumbs and fat-free buttermilk are used in this low fat version of traditional fried chicken. With subtle Italian flavoring, this recipe is likely to become a family favorite.
1/4 cup bread crumbs, dry, grated, plain
1/4 cup parmesan cheese, grated
1 tsp ground oregano
1/2 tsp dried rosemary
1/4 tsp dried basil
12 oz. boneless, skinless, chicken breast
1/2 cup fat-free buttermilk
Combine bread crumbs, parmesan cheese, oregano, rosemary, basil, and pepper in a small bowl. Dip chicken in buttermilk and roll in bread crumb mixture. Coat a baking pan with cooking spray and place chicken in the pan. Bake, covered at 350 degrees for 25 minutes; remove cover and bake 20 minutes more until done.
Makes 4 servings. Each serving contains 161 calories, 6g carbohydrate, 3 grams of fat, 55 mg of cholesterol, 24 grams of protein, and 262 grams of sodium.
